Baghali Polo is an authentic Iranian soup made with a broth of split peas, onion, herbs and lemon juice. Traditionally it’s served on its own but I like to add some freshly baked bread for dipping. For a more filling meal you can add meat to your baghali polo by throwing in chunks of stewing lamb or lamb ribs which has been cooked on its own for about 1 hour until tender and succulent.

How can you tell if your meat or fish is fresh? An experienced chef will always know. Fresh ingredients are not only safe to eat, but they also guarantee top-quality taste and flavor. Vegetarian Delights

Many non-Iranians assume that all traditional Persian food is based on meat. While it’s true that kebabs, chicken, and fish are popular among Iranians, there are plenty of other options available if you know where to look. The most famous example is vegetarian khoresht, a traditional stew made with saffron rice, vegetables (including potatoes), herbs, and spices.

Naan and Flatbreads

Naan bread and all flatbreads are traditionally baked without yeast. These breads provide an alternative to traditional sliced bread and they can be used to mop up sauces and gravies. In Iran, Naan (or Nân) is eaten daily as a staple food. It’s also often served with kebabs and other Persian stews at dinner time or it may also be dipped into a variety of stews or gravies.

Desserts

While Middle Eastern desserts are not as famous as their European counterparts, they are still absolutely delicious. Try Sabzeh Berenji or Koloocheh: In Iran, it is customary to eat a small bowl of cooked wheat grains with some clotted cream and brown sugar after meals. However, an option you may prefer is Koloocheh (pistachio rice pudding). Simply pour some boiling water over dry rice and pistachios, cover and let it stand for an hour or two.
